  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract (for a pumpkin spice latte effect, replace with 1tbsp of espresso)

Step 1: Make the Pumpkin Spice Whipped Cream

  1. In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, pumpkin puree, pumpkin pie spice, and vanilla extract.

  2. Using an electric mixer, whip the ingredients together until stiff peaks form. This should take about 3-4 minutes. Set aside.

Step 2: Assemble the Cake

  1. On a serving platter or cake stand, pipe a layer of whipped cream to hold your cookies upright.

  2. Pipe a dollop of whipped cream on the bottom of each cookie and place perpendicular onto the whipped cream base layer. You'll want to make sure each cookie is placed against the last cookies whipped cream dollop so there's no gaps. 

  3. Continue layering cookies and whipped cream until you've reached your desired height. Typically, four or five rows work well.

  4. Once you have the amount of cookies placed, you'll fill in any gaps with more whipped cream and then cover the entire cake with a layer of whipped cream.

Step 3: Refrigerate and Set

  1. Once assembled, cover the cake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight. This allows the flavors to meld, and the cookies to soften into a cake-like texture.

Step 4: Serve and Enjoy

  1. Before serving, you can dust the top of the cake with a sprinkle of pumpkin pie spice or cinnamon for an extra touch of autumn flavor. Add one more dollop of whipped cream and a pumpkin spice cookie on top for added decoration.
